Founded in 2006, this artisanal distillery is located in Haliimaile, surrounded by the fields of Maui Gold pineapples that are used to make its signature spirit, Pau Maui Vodka.
A two-step distillation process starts with a pineapple mash and yields a clean-tasting vodka with no pineapple flavor, but a lingering softness from the fruit.
The distillery also produces a Paniolo Whiskey, a full-bodied bourbon blended with pineapple distillate, as well as the first Maui-made gin, which incorporates 11 botanicals including locally grown lavender.
A 45-minute distillery tour includes an explanation of the process and a close-up look at the company’s unique glass stills in action, as well as a chance to sip the different products in the tasting room.
